A special blend of spices for cooking vegetable delicacies on a flat pan (tava)
Dress and slit lengthwise a selection of vegetables – bitter gourd, okra ( Lady finger),Egg plants, aubergines, lotus stems, onions, potatoes etc.
Stuff each vegetable with 1-2g Tava Fry Masala.
On a tava, heat 100g cooking oil/ghee. Gently place the vegetables slit side up on the tava and simmer on a low flame, turning occasionally until tender.
Drain and serve hot with roti (Indian bread).
